I opened Choices in 1986, 11 years after graduating from the Culinary Institute of America. I had the opportunity to work in notable restaurants and Hotels on both coasts before deciding to leave San Francisco and return to my home state.
The opportunity to open my own restaurant came with the building of Glazebrook Townhouse complex and I was afforded the opportunity to work with the contractor, Red Glaze, and design it from blueprint state.
Being the Chef, the menu has always featured everything being made in-House and in addition to the basic stocks, sauces, dressings, meat and fish cutting, I included our own bread, desserts and fresh pasta.
I chose the name “Choices” because of the array of menu items to pick from. From Nachos to Escargots, fried Calamari to Crab Cakes, Steak Sandwiches to Filet Mignon, Burgers to Rack of Lamb, we feature an over 60 item menu and an array of Daily Specials.
Our gas Rotisserie comes from France and flame roasts Chicken, Lamb and stuffed Pork. You can also get a sampler of all three. Prime Rib on Weekends.
Our Dining room seats 60 people with the tables appointed with tablecloths and cloth napkins. Our Bar area is equally well appointed with a custom made cherry wood bar, back bar and a custom made wine cooler that keeps both our red and white wines at the appropriate temperatures. We offer the same menu at the bar and it’s a great place to relax and enjoy your meal and company.
Our Wine list equals the Menu in options and price ranges. We also take the care to offer over 20 Wines by the glass. We pride ourselves in creative Martinis and Cocktails, and proudly serve Vt. beers on draft.
Over the years, I’ve made menu changes but have kept favorites around since day one.
You can expect consistency and top quality ingredients. I was a “locovore” Chef well before the term was coined and use local ingredients as much as possible.
